  • 3-4 cups butternut squash, peeled, seeded and diced
  • 1/2 medium onion, diced
  • 1 teaspoon curry powder
  • 1/2 teaspoon cayenne pepper
  • 2-1/2 cups broth
  • 3 tablespoons extra virgin olive oil
  • salt and pepper (to taste)
