Chicken and herb fritters appetizers

Ingredients
1lb Mashed potato,
with butter added
8 oz Chopped, cooked chicken
4 oz Cooked ham,
chopped finely
1 tbsp Mixed herbs
2 Eggs, lightly beaten
Milk
4 oz Fresh brown breadcrumbs
Oil for shallow frying
Salt and pepper
Preparation
In a large bowl, blend the potatoes, chicken, ham, herbs and 1 egg, and season well. Shape the mixture into small balls or flat pancakes.
Add a little milk to the second egg.
Place the breadcrumbs on a plate. Dip the balls in the egg and milk mixture then roll in the breadcrumbs to coat them completely.
Heat the cooking oil in a large frying pan and cook the fritters until they are golden brown.
Garnish it with fresh lettuce and tomato.
